Canefire Backburn is an overproof dark rum which presents a smooth and rich mouthfeel. It is cold brewed and the brew can take up to four months just to ferment and refine. This creates a dry and smokey quality. Brewing out allows all the sugar in the batch to be utilised which results in it distilling into a much cleaner spirit.

This spirit is then aged in our 6000 Litre French Oak barrels for a minimum of two years. Barrel strength is at around 62.5% and we add just enough pure water to get to that magic 51.4% final rum.

Sweet wood akin to qualities of maple syrup and apple wood. Sustained characteristics with a subtle spice quality.

This is the boldest of our three Canefire rums and sits at just over 100 US proof!

Backburn should be sipped over ice.
