| Canefire is a new spirit. Even
though it is made from a rum like brew of sugar (called a
patch) it is not harsh like rum which uses molasses. Canefire
starts as sugar cane growing in the Ord River Valley around
Kununurra in the Kimberley region of Western Australia. It is
harvested and then processed to an unrefined sugar.
Kimberley Rum Company takes this sugar and brews it with
high quality yeasts. A good brew takes time and Canefire is
brewed longer that any other spirit.
The Canefire patch is then refined, to remove any methanol
and fusil oils. These are the nasty by-products of distilling
that give you that really bad headache type hangover.
The remaining Canefire patch is then treated by our own
patent process to create a flavour base that is blended to
produce the final spirit. Unlike other spirits, the colour and
flavour of Canefire is obtained as a natural part of the
brewing and distilling process.
The spirit is then matured in holding vats to produce the
smooth, sweet final flavour.
Canefire has been developed, as well as grown, owned, made
and bottled in Western Australia. |
